Nectarine Upside Down Syrup Cake

This is one of the prettiest cakes I’ve ever made, and it tastes sensational with almost any seasonal fruit. Try it with pears, apples, peaches or any fruit that tickles your tastebuds.

Instructions
  1. Slice the nectarines, reserving the prettiest ones to use first.
  2. Preheat the oven to 180°.
  3. Grease an 11’’ springform cake-tin and line with baking paper.
  4. Cream 200 gms butter with ½ cup caster sugar, ½ cup brown sugar, the vanilla, zest and spices.
  5. Beat in the eggs, one at a time.
  6. Add the almond meal and beat until smooth, then add the flour and milk. Mix until just blended.
  7. Melt together 100 grams of butter and 2/3 cup of brown sugar in a small saucepan.
  8. Pour this into the lined cake pan and arrange nectarines in a spiral working from the centre out. Use the prettiest slices first to create an impressive spiral.
  9. Fill any gaps as you go with your less glamorous slices, until a solid surface of nectarines is embedded in the brown sugar syrup.
  10. Pour the cake batter evenly across the nectarines and bake for 50 – 60 mins or until a knife comes out clean.
  11. In a small saucepan combine the syrup ingredients. Stir until the sugar is dissolved then boil on a medium heat for 5 – 7 minutes.
  12. Strain and reserve the zest.
  13. When the cake is baked, stand it upside-down on a plate for 5 minutes.
  14. Turn it upside down again (nectarines are on the bottom) and carefully remove springform. Beware of oozing caramel syrup!
  15. Using a small sharp knife, make deep incisions into the cake's surface.
  16. Spoon lemon syrup all over the cake, encouraging it to drip generously into the cracks.
  17. Wait 10 minutes then invert the cake onto the intended serving plate. (Nectarines on the top now)
  18. Gently peel away the baking paper and be dazzled by your culinary masterpiece.
  19. Decorate with the shreds of syrup coated lemon zest and serve with lashings of fresh cream.
