Hommus

If you have a decent stick blender, hommus is incredibly quick, cheap and easy to make at home. It’s so simple to adjust the ingredients to suit your palate. Just add a bit of extra garlic and lemon juice for more zing, or add an extra can of chick peas if you prefer a milder hommus. It’s so much less expensive than the shop bought stuff, you can afford to slather it all over your falafel roll.

  1. Rinsed the canned chickpeas and soak in boiling water for 5 minutes. (You can use home cooked chickpeas of course.)
  2. Drain off most of the water. Add half of the clove of garlic, half the lemon juice, the tahini, oil and salt.
  3. Smash it all together in a blender.
  4. Taste test and add the rest of the garlic, lemon juice and/or a bit more salt if you think it needs it.
