  1. Combine the biscuit crumbs with melted butter and press evenly into the base of your flan tin. Pop it in the fridge for a half an hour.
  2. Chop the plums and pop them into a saucepan with a couple of spoons of sugar and a tablespoon of lemon juice and cook for 10 minutes, until the plums are soft.
  3. Leave to cool.
  4. Preheat the oven to 160°.
  5. Combine cream cheese with remaining sugar and lemon juice, beat well and add eggs one at a time.
  6. Beat in the cream.
  7. Pour plums into base, then pour cream filling on top.
  8. Swirl with a knife and bake for about an hour until completely set.
  9. Leave to cool in the oven with the door ajar.
  10. When thoroughly cooled, set in fridge for at least 2 hours. Serve with cream and fresh fruit, this is a divinely yummy cheesecake.
