Bean Enchiladas

Serve with rice, sour cream, sliced jalapenos, Hot Ugly Sauce or any chili sauce you fancy.

NOTE: Use Sandy’s Cheese Sauce and Mexican Bean Mix.

  1. Preheat the oven to 180° c.
  2. Sprinkle a little grated cheese on the first tortilla.
  3. Spoon ¼ cup of bean mix on top and roll up.
  4. Place the enchilada in a lasagne dish or suitable ovenware, folding the ends in as you go.
  5. Fill each tortilla, and place evenly alongside each other until your baking dish is full.
  6. Pour the cheese sauce across the tortillas, poking it into the gaps between each tortilla with a blunt knife.
  7. Bake until sizzling and golden, usually around 30 minutes.
