Baked Pesto Ricotta

Ridiculously simple to make and unbelievably good to eat. Baked pesto ricotta is a sensational party dip and works well in pasta bakes, on pizza or in gourmet toasties.

  1. Oil a suitably sized, shallow ceramic dish and fill with the ricotta breaking it up as you go.
  2. Stir half of the pesto through the ricotta unevenly, until it all looks nice and streaky.
  3. Spread remaining pesto thickly across the surface.
  4. Bake in a moderate oven for 20 minutes until crusty and aromatic.
  5. Serve warm with crackers, on pizzas, in pastries or to yummy up a pasta bake.
